AI and Machine Vision Transform Cheese Production

Advances in artificial intelligence and machine vision are transforming quality control in the food industry. A recent project by Eberle Automatische Systeme demonstrates how AI-powered inspection can automate complex processes in cheese production.

Working with the traditional dairy Gebr. Baldauf GmbH & Co. KG, the company developed an automated monitoring and treatment system for the cheese-ripening process using machine vision technology from MVTec.

Automating inspection in a complex production process
Cheese ripening can take up to 14 months, during which each wheel must be regularly inspected and treated to ensure proper rind formation and prevent mold growth.

Traditionally, these inspections are performed manually. However, increasing production volumes and labor shortages have pushed producers to adopt automation.

To address these challenges, Gebr. Baldauf GmbH & Co. KG partnered with Eberle Automatische Systeme to develop a fully automated monitoring solution.

AI-driven inspection with machine vision
The system integrates several technologies:

  • A mobile care robot operating inside the ripening facility
  • 4K cameras capturing high-resolution images of cheese wheels
  • Onboard AI-based image processing
  • Web-based monitoring for remote inspection and process control

The inspection platform is powered by the HALCON machine vision software from MVTec, which uses deep-learning methods to detect anomalies during the ripening process.

The system analyzes images to detect defects such as:

  • Mold spots
  • Cracks
  • Surface discoloration
  • Structural irregularities

At the same time, the robot performs care tasks such as treating the cheese surface and removing unwanted smear layers.

Benefits for dairy production
The automated monitoring system delivers several key benefits:

Increased efficiency
Autonomous operation significantly reduces the need for manual inspection.

Waste reduction
Early detection of defects enables rapid intervention, minimizing product loss.

Improved quality control
AI-based inspection ensures consistent results and enables 100% inspection coverage.

Full traceability
All inspection results are stored digitally, supporting long-term analysis and process optimization.

Handling the variability of natural products
One of the main technical challenges was the natural variability of cheese during ripening. Each wheel changes differently over time, making traditional rule-based inspection difficult.

Using deep-learning capabilities in HALCON, engineers trained models with large datasets of cheese images. The system can now reliably distinguish between normal variations and actual defects.

Toward fully automated cheese production
The solution represents a major step toward fully automated cheese ripening processes.

Eberle Automatische Systeme is continuing to refine the system so it can handle different cheese types and ripening stages. Future developments may also integrate the system with ERP platforms and cloud-based production management tools.

By combining robotics, AI, and machine vision, the project demonstrates how advanced automation technologies can enhance efficiency, quality, and sustainability in food manufacturing.
