In salmon processing, aquaculture and secondary value-added production, increasing yield, improving hygiene and ensuring traceability are central operational challenges. At Salmon ShowHow 2026, held on February 4, 2026 at Copenhagen Progress Point, JBT Marel presented its expanded processing portfolio, software ecosystem and strategic partnerships to 250 visitors representing 130 companies from 27 countries.
The event combined equipment demonstrations, keynote presentations and live case studies to illustrate how integrated automation, digital tools and service strategies can support scalable and efficient salmon processing.
Expanded portfolio for end-to-end processing
Following the integration of JBT and Marel processing and packaging technologies, the portfolio now covers a broader range of primary and end-of-line applications. The combined offering includes brining systems based on Schröder injectors, spiral freezing systems from Frigoscandia for hygienic high-capacity freezing, and tray sealing equipment from Proseal.
By consolidating these technologies within a single supplier structure, JBT Marel positions itself to deliver more complete processing lines, from primary handling through packaging. For processors, a unified equipment portfolio can simplify system integration and reduce interface complexity between different suppliers.
Gutting automation and prototype development
A central focus at the event was the collaboration with Bakkafrost, a salmon producer based in the Faroe Islands. The companies presented progress on the EVi salmon gutting machine, currently operating as a prototype and scheduled for market release at the end of 2026.
Samples processed by the EVi system were displayed to demonstrate cutting accuracy and product quality. The development aims to improve consistency in gutting operations, a critical step influencing downstream yield, hygiene and fillet quality.
Retrofittable upgrades in deheading technology
The MS 2721 V salmon deheader was shown with new retrofittable upgrades, including enhanced safety features, updated vision systems and improved hygiene design. The automated deheading and tail-cutting system is intended to increase operator support and process reliability.
Retrofittable upgrades allow processors to modernize existing installations without complete equipment replacement, reducing capital expenditure while improving performance and compliance.

Partner collaboration in aquaculture processing
Strategic partners Ace Aquatec and MMC First Process participated in the exhibition, demonstrating complementary technologies within the salmon value chain.
MMC First Process presented its involvement in the Hofseth project, illustrating integrated design and procurement for aquaculture through further processing. The collaboration focuses on coordinated system engineering to streamline project execution.
Ace Aquatec demonstrated the A-HSU fish stunning system, designed to improve fish welfare and product quality during harvest. Humane stunning methods can influence fillet quality and support sustainability objectives in aquaculture operations.
System Cleaners presented low-pressure cleaning solutions integrated directly into processing equipment, including deheaders. In-process clean-in-place (CIP) functionality allows hygienic cleaning without stopping production lines, supporting food safety while minimizing downtime.
Software-driven connectivity and traceability
In a dedicated AXIN software area, JBT Marel demonstrated how integrated software tools support uptime, traceability and data-driven decision-making. SmartBase machine connectivity enables monitoring of equipment performance, while Digital Trace and Digital Insight applications provide traceability and production analytics.
A technical presentation titled “How software supports reliable, scalable salmon processing” addressed the role of software in improving operational transparency and system scalability. Integrated data environments can support maintenance planning, yield analysis and compliance documentation.
Virtual factory visualization
For the first time at Salmon ShowHow, visitors explored a virtual factory environment through interactive 3D visualizations of primary, secondary and slicing value chains. The immersive presentation illustrated how coordinated equipment and software systems can optimize material flow and resource utilization.
Process-specific deep dives, including gutting operations, demonstrated how integrated automation supports consistent product quality and efficient resource use.
Service and lifecycle support
JBT Marel’s service team presented lifecycle support strategies focused on proactive maintenance, scheduled service visits and rapid-response troubleshooting. The objective is to increase uptime, maintain yield performance and extend equipment service life.
By combining equipment, digital solutions and service under one framework, JBT Marel presented an integrated approach to salmon processing modernization.
Salmon ShowHow has been held for 24 years and continues to serve as a platform for technology exchange and collaboration within the salmon processing industry. The 2026 edition emphasized integrated automation, software connectivity and partnership-driven innovation in support of efficient and scalable aquaculture operations.
